• 2 large eggs, lightly beaten
• ½ cup / 120g whole milk ricotta cheese or farmer cheese
• ¾ cup / 90g fine, dry bread crumbs
• ¼ tsp dried basil
• ¼ tsp dried oregano
• ¼ tsp dried rosemary
• 1 tsp salt, or to taste
• pinch of cayenne pepper
• freshly ground black pepper, to taste
• For Garnish
• Fresh parsley sprigs
• Thinly sliced radishes
• Thinly sliced carrots or carrot ribbons

Instructions

1. Preheat your oven to 350°F / 175°C. Generously butter a medium-sized loaf pan (approx. 8×4 inch / 1.5L). Line the pan with parchment paper, leaving an overhang on the long sides to act as handles. Butter the parchment paper as well.
2. In a food processor, combine the mushrooms, celery, and parsley. Pulse until the mixture is very finely chopped, resembling a coarse paste. Be careful not to liquefy it. Set aside.
3. In a small skillet over medium heat, melt 1 tablespoon of the butter. Add the minced shallots and sauté until soft and fragrant, about 3-4 minutes. Do not let them brown.
4. In a large mixing bowl, combine the processed mushroom mixture and the cooked shallots. Add the remaining 3 tablespoons of melted butter, the beaten eggs, ricotta cheese, bread crumbs, basil, oregano, rosemary, salt, cayenne, and a generous amount of black pepper.
5. Stir with a spatula until all are thoroughly and evenly blended.
6. Spoon the mushroom mixture into the prepared loaf pan, spreading it evenly and smoothing the top. Fold the parchment paper overhang over the top of the pâté.
7. Bake for 1 to 1¼ hours, or until the pâté is firm to the touch and a skewer inserted into the center comes out clean.
8. Let the pâté cool in the pan on a wire rack until it is easy to handle.
9. Using the parchment paper handles, carefully lift the pâté out of the pan. Peel away the paper and transfer to a serving board or storage container.
10. Chill in the refrigerator for at least 4 hours, or preferably overnight, to allow the flavors to meld and the pâté to firm up completely.
11. To serve, garnish with fresh parsley and decorate with thin slices of radish or carrot. Serve with crackers, crostini, or pumpernickel bread.
