Side Dishes

March 22, 2026

Welcome to flavor town! If you thought you had to give up the iconic New Orleans muffuletta sandwich when you went vegetarian, think again. We’re swapping out the traditional meats for something just as hearty, savory, and satisfying: thinly sliced, pan-seared portobello mushrooms. Paired with a briny, tangy, and utterly addictive olive salad piled high on a classic round loaf, this sandwich is a true showstopper. It’s perfect for picnics, parties, or any day you’re craving a sandwich with some serious personality. Let’s get building!

Ingredients

• ¼ cup / 60 ml extra-virgin olive oil, plus more for drizzling
• 3 large portobello mushroom caps, cut into ¼-inch / 6 mm slices
• Salt and freshly ground black pepper, to taste
• 2 tablespoons / 30 ml balsamic vinegar
• 1 cup / 150g chopped pimiento-stuffed green olives
• ½ cup / 75g chopped bottled roasted red bell peppers
• ½ cup / 60g chopped bottled peperoncini peppers
• ½ cup / 120g green or black olive tapenade
• ¼ cup / 35g chopped oil-packed sun-dried tomatoes
• 1 large round loaf of Italian or Sicilian bread

Instructions

1. Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the mushroom slices in a single layer (work in batches if needed) and sear until golden brown on both sides.
2. Season the mushrooms with salt and pepper, then drizzle with the balsamic vinegar. Cook for another minute until the vinegar has reduced and the mushrooms are tender, about 5 minutes total. Transfer to a plate to cool.
3. While the mushrooms cool, prepare the olive salad. In a medium bowl, combine the chopped olives, roasted red peppers, peperoncini, tapenade, sun-dried tomatoes, and the remaining 2 tablespoons of olive oil. Season with salt and pepper and stir to combine.
4. Prepare the bread by carefully slicing the loaf in half horizontally with a serrated knife. To make room for the generous filling, gently scoop out some of the soft interior from both the top and bottom halves.
5. Assemble the sandwich. Lightly drizzle the cut sides of the bread with olive oil. Spread half of the olive salad mixture over the bottom loaf. Arrange the cooled portobello mushroom slices in an even layer on top. Spread the remaining olive salad over the mushrooms.
6. Place the top half of the bread on top and press down gently. For the best flavor, wrap the entire loaf tightly in plastic wrap and let it sit for at least 30 minutes before serving. To serve, unwrap and cut the loaf into 4 equal wedges.

Pro Tips

• for the Perfect Muffuletta
• For an even more authentic experience, wrap the assembled sandwich tightly and press it under something heavy (like a cast-iron skillet or a few books) for at least an hour. This melds the flavors and makes it easier to eat.
• This sandwich is even better the next day! Make it ahead of time to allow the olive salad juices to soak into the bread, creating an incredibly flavorful result.
• Don’t be afraid to customize the olive salad. Add a tablespoon of capers, a pinch of red pepper flakes for heat, or some chopped fresh parsley for brightness.
• The bread is key. Look for a sturdy, round Italian or Sicilian loaf with a soft interior and a crisp crust that can hold up to the hearty fillings without getting soggy.

FAQ

Q: Can I make this muffuletta vegan
A: Yes, this recipe is easily adapted to be fully vegan. Simply ensure your round loaf is free of dairy and eggs, and double-check that your olive tapenade is anchovy-free. All other ingredients are naturally plant-based.

Q: What can I use instead of portobello mushrooms
A: If you’re not a fan of mushrooms, you can substitute them with other hearty vegetables. Try using layers of grilled eggplant, roasted zucchini, or marinated artichoke hearts. For another protein-rich option, consider using thinly sliced and pan-seared firm tofu or seitan.

Q: How can I add more protein to this vegetarian muffuletta
A: To boost the protein content, you can add a layer of sliced provolone or mozzarella cheese (if not vegan). For a plant-based protein punch, consider adding a layer of pressed and seasoned firm tofu, smoked tempeh, or even some mashed chickpeas mixed into the olive salad.

Q: How long does this portobello muffuletta last in the fridge
A: This sandwich is fantastic for making ahead. Wrapped tightly in plastic wrap or foil, it will keep well in the refrigerator for up to 3 days. The flavors will continue to meld and soak into the bread, making it even more delicious on day two.
