Ingredients

• ⅔ cup / 160 ml tahini
• ⅓ cup / 80 ml low-sodium soy sauce or tamari
• ¼ cup / 60 ml apple cider vinegar
• ⅓ cup / 80 ml olive oil
• 2 teaspoons / 10 ml lemon juice
• 1 clove garlic
• ¾ teaspoon / 3 g sugar

Instructions

1. Combine all , except for the olive oil, in a blender or food processor. Process until the mixture is completely smooth.
2. With the blender running on high speed, slowly stream in the olive oil. Continue blending for a full minute until the dressing is thick, creamy, and fully emulsified.
3. Transfer the dressing to a jar and chill in the refrigerator for at least 10 minutes before serving. The dressing will continue to thicken as it cools.
