Instructions

1. Prepare the rice & saffron: If using basmati, rinse under cold water until it runs clear, soak for 30 minutes, then drain well. Bring the water to a boil in a heavy 1.5-quart/liter saucepan. Pour 2½ tablespoons / 37 ml of this boiling water over the saffron threads in a small bowl and set aside to infuse for 10-15 minutes.
2. Cook the rice: To the remaining boiling water in the saucepan, stir in the drained rice, cinnamon stick, cloves, and salt. When the water returns to a boil, reduce heat to very low, cover tightly, and simmer for 20-25 minutes, or until the rice is tender and has absorbed all the water. Do not lift the lid or stir.
