Ingredients

• 1 cup / 200g Arborio rice
• 3 tablespoons / 42g unsalted butter
• 1/2 cup / 55g freshly grated fontina cheese
• 1/4 cup / 25g freshly grated Parmesan cheese, plus more for serving
• Salt, to taste
• Freshly ground black pepper, to taste

Instructions

1. Bring a large pot of water to a rolling boil. Salt the water generously, as you would for pasta. Add the Arborio rice in a steady stream, stirring once to prevent clumping.
2. Once the water returns to a boil, reduce the heat to a steady simmer. Cook for about 15 minutes, or until the rice is tender but still has a slight bite (al dente). Drain the rice thoroughly.
3. In a saucepan large enough to hold all the cooked rice, melt the butter over medium heat. Allow it to cook until it just begins to turn a light golden brown and smells nutty.
4. Immediately add the drained rice to the brown butter and toss to coat every grain.
5. Remove the pan from the heat. Stir in the grated fontina until it melts into a creamy sauce. Add the Parmesan cheese, a pinch of salt, and a generous amount of black pepper. Stir until everything is well combined and gloriously cheesy.
6. Serve immediately, passing extra Parmesan cheese at the table for sprinkling.
