• ½–1 teaspoon / 2–5 ml salt, to taste
• 1–1½ teaspoons / 5–7 ml freshly cracked black pepper
• 5 or 6 lemon or lime wedges, for garnishing

Instructions

1. If using basmati rice, prepare it by cleaning, washing, and soaking as per package directions, then drain well.
2. In a large stockpot, bring the water, lemon or lime juice, ½ teaspoon of the butter or ghee, and the cassia/bay leaf to a rolling boil over high heat.
3. Stirring constantly, pour the rice into the boiling water in a slow, steady stream. Cook uncovered for 12–15 minutes, until the rice is just tender and fluffy (al dente).
4. Immediately pour the rice into a fine-mesh strainer to drain completely. Let it cool for a minute or two, then remove and discard the cassia or bay leaf.
5. Transfer the rice to a serving platter. Add the remaining butter or ghee, salt, and freshly cracked black pepper. Toss gently to combine all the .
