Ingredients

• 1¼ cups / 200g pitted dates, packed
• ½ cup / 60g chopped mixed nuts, such as walnuts and pecans
• 1 tbsp / 15ml coconut oil
• ½ tsp / 2g ground cardamom
• 1 tbsp / 7g desiccated coconut
• ½ cup / 40g desiccated coconut, for rolling

Instructions

1. Prepare your rolling station by spreading the ½ cup of desiccated coconut onto a flat plate. Keep another plate nearby for the finished balls.
2. Add the pitted dates, coconut oil, ground cardamom, and 1 tablespoon of desiccated coconut to a food processor. Pulse until the mixture forms a sticky, dough-like ball.
3. Transfer the date mixture to a bowl, add the chopped nuts, and knead with your hands until well combined.
4. Rub a little coconut oil on your hands to prevent sticking, then roll the mixture into approximately 14 marshmallow-sized balls.
5. Gently roll each ball in the desiccated coconut to coat completely, then place on your reserved plate.
