Meet your new favorite snack: irresistibly chewy, perfectly sweet, and wonderfully spiced Date and Nut Energy Balls! These little bites of joy are a staple at celebrations across India for a reason. They’re incredibly simple to make (we’re talking minutes!), store for weeks, and are the perfect grab-and-go treat for picnics, lunchboxes, or even as a thoughtful homemade gift. Whether you use a food processor or a simple saucepan, you’re just a few steps away from pure, unadulterated bliss!

Ingredients

• 1¼ cups / 200g pitted dates, packed
• ½ cup / 60g chopped mixed nuts, such as walnuts and pecans
• 1 tbsp / 15ml coconut oil
• ½ tsp / 2g ground cardamom
• 1 tbsp / 7g desiccated coconut
• ½ cup / 40g desiccated coconut, for rolling

Instructions

1. Prepare your rolling station by spreading the ½ cup of desiccated coconut onto a flat plate. Keep another plate nearby for the finished balls.
2. Add the pitted dates, coconut oil, ground cardamom, and 1 tablespoon of desiccated coconut to a food processor. Pulse until the mixture forms a sticky, dough-like ball.
3. Transfer the date mixture to a bowl, add the chopped nuts, and knead with your hands until well combined.
4. Rub a little coconut oil on your hands to prevent sticking, then roll the mixture into approximately 14 marshmallow-sized balls.
5. Gently roll each ball in the desiccated coconut to coat completely, then place on your reserved plate.

Pro Tips

• & Variations
• No food processor? Finely chop the dates and gently heat them in a non-stick pan with the coconut oil and cardamom until a soft paste forms. Cool slightly before mixing in the nuts.
• For the best texture, store these energy balls in an airtight container in the refrigerator. This firms them up, creating a delicious, chewy, toffee-like consistency for up to a month.
• Customize your mix! Swap the walnuts and pecans for almonds, cashews, or pistachios. You can also add a tablespoon of cocoa powder for a chocolate version.
• Lightly toast the nuts and the desiccated coconut in a dry pan before using to deepen their flavor and add a wonderful aroma.

FAQ

Q: Are these date and nut balls vegan
A: Yes, this recipe is 100% vegan and plant-based. It uses coconut oil and contains no dairy, eggs, or other animal products, making it a perfect treat for a vegetarian or vegan diet.

Q: How can I add more plant-based protein to this recipe
A: To boost the protein, you can add a tablespoon of chia seeds or hemp seeds to the food processor. Swapping the nuts for higher-protein options like almonds or pistachios also works well. For a bigger increase, mix in a tablespoon of your favorite unflavored or vanilla plant-based protein powder.

Q: Can I make these energy balls without nuts
A: Absolutely! For a nut-free vegetarian version, simply replace the ½ cup of mixed nuts with an equal amount of seeds like pumpkin seeds, sunflower seeds, or hemp seeds. You can also use rolled oats for a chewier, oat-based ball.

Q: How should I store these vegetarian energy balls
A: For the best texture, store these energy balls in an airtight container in the refrigerator. This helps them firm up to a delicious, chewy, toffee-like consistency. They will stay fresh and tasty for up to a month.
