Cheesy Red Pepper Pizza

PREP: 15 minutes BAKE: 15 minutes OVEN: 425ºF MAKES 8 servings

Nonstick cooking spray

1 13.8-ounce package refrigerated pizza dough

1 tablespoon olive oil

2 medium roma tomatoes, thinly sliced

1⁄2 cup sliced roasted red and/or yellow sweet pepper

2 tablespoons shredded fresh spinach leaves (optional)

1 cup shredded mozzarella cheese (4 ounces)

1⁄4 teaspoon coarsely ground black pepper

2 tablespoons snipped fresh basil

1 Preheat oven to 425°F. Coat a 12-inch pizza pan with cooking spray. Press pizza dough into the prepared pan, building up edge slightly. Brush with oil. Bake for 10 minutes. Remove from oven.

2 Arrange tomato, roasted pepper, and, if desired, spinach on top of crust. Sprinkle with cheese and black pepper.

3 Bake for 5 to 10 minutes more or until toppings are heated through and cheese is bubbly. Sprinkle with basil.

PER SERVING: 182 cal., 6 g total fat (2 g sat. fat), 9 mg chol., 359 mg sodium, 25 g carb., 1 g fiber, 8 g pro.

Substitute mozzarella-flavor soy cheese for the mozzarella cheese.
