Peanut Butter Noodles

1 pound Asian-style noodles

1⁄3 cup natural peanut butter

1⁄3 cup water

3 tablespoons soy sauce (low sodium)

2 tablespoons lime juice

2 tablespoons rice vinegar

1 tablespoon sesame oil

1⁄2 teaspoon ginger powder

1 teaspoon sugar

1⁄2 teaspoon crushed red pepper flakes

Prepare noodles according to package instructions and set aside. Whisk together remaining ingredients over low heat just until combined, about 3 minutes. Toss with noodles.
