We’re taking the beloved, crispy, spice-laden Indian fritter and giving it a modern, healthier twist. You still get that irresistible crunch and the fragrant aroma of ginger, cumin, and cilantro, but without the vat of oil. They’re wonderfully simple to whip up, making them the perfect appetizer for a party or a satisfying snack any day of the week. Serve them hot from the oven with a cooling raita or a zesty chutney for the ultimate flavor explosion.

Ingredients

• Makes 24 bhajis
• ½-inch / 1.3 cm piece of ginger, peeled and roughly chopped
• 1 Indian green chile, chopped
• 2 teaspoons cumin seeds
• 1½ teaspoons salt, plus a pinch for the paste
• 2 pounds / 900g yellow onions
• 4 tablespoons / 60ml canola oil, plus more for greasing
• 1 cup plus 2 tablespoons / 140g chickpea flour (besan)
• 1¼ cups / 20g fresh cilantro, roughly chopped
• ½ teaspoon ground red chile (or to taste)
• 1 teaspoon ground coriander
• ½ teaspoon ground turmeric
• 1 tablespoon / 15ml lemon juice
• 1-2 tablespoons water

Instructions

1. Prep the Oven & Spice Paste: Preheat your oven to 350°F / 175°C. Line two baking sheets with foil and lightly brush them with oil. In a mortar and pestle, combine the ginger, green chile, cumin seeds, and a small pinch of salt. Grind everything into a coarse, fragrant paste and set aside.
2. Sauté the Onions: Peel and halve the onions, then slice them into very thin (about 1/8-inch) half-moon shapes. Heat the 4 tablespoons of canola oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15 minutes until they are soft, translucent, and sweet.
3. Create the Bhaji Batter: Transfer the cooked onions to a large mixing bowl. Add the prepared ginger-chile paste, chickpea flour, chopped cilantro, ground red chile, ground coriander, turmeric, lemon juice, and the 1½ teaspoons of salt. Mix until everything is thoroughly combined.
4. Adjust the Consistency: Slowly add 1 to 2 tablespoons of water, mixing one tablespoon at a time, until you have a very thick, sticky batter that holds everything together. The mixture should not be runny.
5. Form and Bake: Using a tablespoon, scoop portions of the mixture and drop them onto your prepared baking sheets, leaving about an inch of space between each bhaji. You should get about 24 in total.
6. Bake to Crispy Perfection: Bake for 25 to 35 minutes, or until the bhajis are golden brown and starting to crisp up on top.
7. Serve and Enjoy: Carefully remove the bhajis from the oven. You may need a thin spatula or palette knife to gently lift them from the foil. Serve immediately with a fresh cilantro chutney, mango chutney, or beet raita and enjoy the crunch!
