• 1 medium tomato, cut into 8 slices
• 1/8 teaspoon / 0.75g salt
• 1/8 teaspoon / 0.25g ground black pepper
• 1/8 cup / 20g thinly sliced red onion
• 2 tablespoons / 8g shredded fresh basil
• 1/2 cup / 56g crumbled reduced-fat feta cheese
• Olive oil nonstick cooking spray
Instructions
1. Assemble the sandwiches. On four slices of bread, layer half the spinach, the tomato slices, salt, pepper, red onion, and fresh basil. Sprinkle evenly with feta cheese. Top with the remaining spinach and the other four slices of bread, pressing down firmly.
