Ingredients

• 1 cup / 95 g basmati or other long-grain white rice
• 1¾ to 2 cups / 420 to 480 ml water
• ⅓ teaspoon / 1.5 ml high-quality saffron threads
• 1½-inch / 4 cm piece of cinnamon stick
• 6 whole cloves
• ¼ teaspoon / 1 ml salt
• ½ cup / 75 g crumbled jaggery, maple sugar, or light brown sugar, lightly packed
• 1 teaspoon / 5 ml cardamom seeds, coarsely crushed
• 2 tablespoons / 30 ml ghee or vegetable oil
• 3 tablespoons / 45 ml slivered or sliced raw pistachios or almonds
• 3 tablespoons / 45 ml raisins or currants
• 2 tablespoons / 30 ml blanched raw pistachios, sliced, for garnish

Instructions

1. Prepare the rice & saffron: If using basmati, rinse under cold water until it runs clear, soak for 30 minutes, then drain well. Bring the water to a boil in a heavy 1.5-quart/liter saucepan. Pour 2½ tablespoons / 37 ml of this boiling water over the saffron threads in a small bowl and set aside to infuse for 10-15 minutes.
2. Cook the rice: To the remaining boiling water in the saucepan, stir in the drained rice, cinnamon stick, cloves, and salt. When the water returns to a boil, reduce heat to very low, cover tightly, and simmer for 20-25 minutes, or until the rice is tender and has absorbed all the water. Do not lift the lid or stir.
3. Rest the grains: Remove the pan from the heat and let it sit, covered, for 5 minutes. This crucial step helps the fragile grains firm up perfectly.
4. Create the syrup: While the rice rests, combine the saffron-infused water, sweetener, and crushed cardamom in a small saucepan. Place over moderate heat, stirring until the sweetener dissolves. Simmer for 1 minute, then pour this fragrant syrup over the cooked rice and quickly re-cover the pot.
