It makes 12 muffins
• 1½ cups whole wheat flour
• 2 tsp. baking powder
• ½ tsp. salt
• ¾ cup rolled oats
• ¼ cup ground filberts (optional)
• 1 cup milk
• 1 egg
• 3 Tbs. butter, melted
• 2 Tbs. molasses
• ½ cup currants
1. Sift together the flour, baking powder, and salt. Mix in the rolled oats and ground nuts.
2. In another bowl, beat together the milk, egg, melted butter, and molasses. Add the currants and stir the two mixtures together just until they are well combined, then spoon the batter into buttered muffin tins.
3. Bake the muffins in a preheated oven at 400 degrees for about 20 minutes. Serve warm.
