    Ramen Noodles with Vegetables

    START TO FINISH: 15 minutes MAKES 2 to 3 servings

    1 3-ounce package ramen noodles (any flavor)

    1 tablespoon vegetable oil

    6 ounces fresh asparagus, trimmed and cut into 1-inch pieces (1 cup)

    1⁄2 cup shredded carrot (1 medium)

    1⁄4 cup light teriyaki sauce

    1 Cook noodles according to package directions (discard seasoning packet); drain. Return noodles to hot pan; cover and keep warm.

    2 Meanwhile, in a large skillet heat oil over medium-high heat. Add asparagus and carrot. Cook and stir for 3 to 5 minutes or until asparagus is crisp-tender. Stir in teriyaki sauce and cooked noodles; toss gently to coat.
