Bruschetta Burgers

    START TO FINISH: 25 minutes MAKES 4 servings

    Nonstick cooking spray

    4 frozen tomato, basil, and cheese meatless burger patties

    4 slices mozzarella cheese (3 ounces)

    2 thin multigrain sandwich rounds, split, or 4 slices whole wheat bread

    8 to 12 fresh basil leaves

    4 slices tomato

    Shredded fresh basil (optional)

    1 Preheat broiler. Coat a large nonstick skillet with cooking spray; heat skillet over medium heat. Add frozen patties; cook for 8 to 10 minutes or until heated through, turning occasionally.

    2 Arrange patties on 1 side of a large baking sheet; top with cheese. Place sandwich rounds, cut sides up, on the other side of the baking sheet.

    3 Broil 4 to 5 inches from the heat for 1 to 2 minutes or until cheese is melted and sandwich rounds are toasted. Remove from broiler.

    4 Divide basil leaves among sandwich rounds. Top with patties, tomato slices, and, if desired, shredded basil.
