Easy Falafel Patties

Serves 4

1 15-ounce can chickpeas, well drained

1โ„2 onion, minced

1 tablespoon flour

1 teaspoon cumin

3โ„4 teaspoon garlic powder

3โ„4 teaspoon salt

1 egg

1โ„4 cup chopped fresh parsley

2 tablespoons chopped fresh cilantro

Preheat oven to 375ยฐF.
Place chickpeas in a large bowl and mash with a fork until coarsely mashed. Or pulse in a food processor until chopped.
Combine chickpeas with onion, flour, cumin, garlic powder, salt, and egg, mashing together to combine. Add parsley and cilantro.
Shape mixture into 2-inch balls or 1-inch-thick patties and bake in oven for 15 minutes, or until crisp. Falafel can also be fried in oil for about 5โ€“6 minutes on each side.

Falafel Sandwiches
Stuff falafel into a pita bread with some sliced tomatoes and lettuce and top it off with a bit of tahini, vegan tzatziki, or hummus for a Middle Eastern sandwich.
