1 15-ounce can chickpeas, well drained
1โ2 onion, minced
1 tablespoon flour
1 teaspoon cumin
3โ4 teaspoon garlic powder
3โ4 teaspoon salt
1 egg
1โ4 cup chopped fresh parsley
2 tablespoons chopped fresh cilantro
Preheat oven to 375ยฐF.
Place chickpeas in a large bowl and mash with a fork until coarsely mashed. Or pulse in a food processor until chopped.
Combine chickpeas with onion, flour, cumin, garlic powder, salt, and egg, mashing together to combine. Add parsley and cilantro.
Shape mixture into 2-inch balls or 1-inch-thick patties and bake in oven for 15 minutes, or until crisp. Falafel can also be fried in oil for about 5โ6 minutes on each side.
Falafel Sandwiches
Stuff falafel into a pita bread with some sliced tomatoes and lettuce and top it off with a bit of tahini, vegan tzatziki, or hummus for a Middle Eastern sandwich.
