• 4 Tbs / 60 ml olive oil
• 4 Tbs / 57 g butter or vegan butter
• 3 large onions, coarsely chopped
• 3 cloves garlic, peeled and minced
• 2 Tbs / 14 g sweet paprika
• ¼ tsp / 0.5 g hot paprika
• 2 lbs / 900 g sauerkraut, undrained
• 6 cups / 1.4 L water, more if needed
• 1 stalk celery, sliced
• 1 carrot, peeled and sliced
• 3 cups / 700 g sliced, peeled tomatoes, with their juice
• 1 tsp / 2 g caraway seeds
• 2 oz / 55 g dried black mushrooms, such as shiitake
• 3 tsp / 12 g sugar
• ½ cup / 120 ml dry red wine
• 1 tsp / 1 g dried dill weed
• 1½ tsp / 9 g salt, or more to taste
• Freshly ground black pepper to taste

Instructions

1. Heat the olive oil and butter in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onions and sauté for 8-10 minutes until softened and golden. Stir in the minced garlic and cook for 1 minute more until fragrant.
2. Add the sweet and hot paprika, stirring constantly for 30 seconds to toast the spices and release their aroma.
3. Pour in the sauerkraut, water, celery, carrot, and tomatoes with their juice. Stir well to combine.
4. While the soup heats, place the dried mushrooms in a bowl and cover with hot water. Let them soak for 15 minutes to rehydrate. Drain, rinse thoroughly to remove any grit, slice them into thin strips, and add them to the pot.
5. Lightly crush the caraway seeds and add them to the soup, along with the sugar, red wine, dill weed, salt, and a generous amount of black pepper.
