The Ultimate Bengali Street Food Snack!

Close your eyes and imagine the bustling streets of Calcutta. What do you taste? For me, it’s the chaotic, crunchy, tangy, and spicy symphony that is Jhal Moori. This isn’t just a snack; it’s an experience in a bowl. A brilliant medley of puffed rice, fresh vegetables, potatoes, and a secret blend of spices, all tossed together at lightning speed by a street vendor. It’s the perfect afternoon pick-me-up, a light lunch, or, as I’ve discovered, an absolutely show-stopping appetizer for dinner parties. The magic is in the last-minute assembly, which keeps every bite addictively crisp. Get ready to bring the vibrant energy of Bengali street food right into your kitchen!

Ingredients

• SERVES 6
• 1 cup / 128g seedless baby cucumbers, about 3, cut into ⅓ inch dice
• ½ cup / 75g onion, peeled and cut into ¼ inch dice
• 1 cup / 180g firm tomatoes, cut into ⅓ inch dice
• 6 oz / 170g waxy potato, 1 medium, boiled, cooled, and cut into ¼ inch dice
• ½–1 fresh hot green chili, finely sliced, optional
• 3 tablespoons fresh cilantro, chopped
• ¼ teaspoon ground roasted cumin
• Freshly ground black pepper, to taste
• ¾ teaspoon salt
• ½ teaspoon chaat masala
• 1–3 pinches red chili powder
• ½ teaspoon Tamarind Chutney, optional
• ½ teaspoon Green Chutney, optional
• 1 teaspoon mustard oil, for authentic flavor
• 1 tablespoon lime juice
• 2 cups / 30g puffed rice

Instructions

1. In a large mixing bowl, combine the diced cucumbers, onions, tomatoes, boiled potato, green chilies (if using), and chopped cilantro.
2. In a separate small bowl, mix together the ground roasted cumin, black pepper, salt, chaat masala, and red chili powder. Set aside.
3. Heat a dry wok or large frying pan over medium heat. Add the puffed rice and toast, stirring constantly, for 3-4 minutes until crisp. Be careful not to let it brown. Transfer to a separate bowl to cool slightly.
4. Just before serving, add the toasted puffed rice and the prepared dry spice mix to the bowl of vegetables.
5. Drizzle with the tamarind and green chutneys (if using), mustard oil, and lime juice. Toss everything together vigorously until well combined.
6. Taste and adjust seasonings if needed, then serve immediately to enjoy the best crunch.

Pro Tips

• for Perfect Jhal Moori
• Assemble Just Before Serving: To maintain the signature crunch of the puffed rice, mix all the wet and dry together only when you are ready to eat. It gets soggy in about 10-15 minutes!
• Use Authentic Mustard Oil: For that quintessential, pungent Bengali flavor, don’t skip the mustard oil. A small amount adds a sharp, signature kick that makes the dish authentic.
• Don’t Skip Toasting: Even if your puffed rice feels crisp out of the bag, toasting it for a few minutes in a dry pan enhances its nutty flavor and guarantees maximum crunchiness.
• Get Creative with Add-ins: Customize your Jhal Moori! Popular additions include roasted peanuts, sev (crispy chickpea noodles), sprouted mung beans, or even chopped raw green mango for extra tang.

FAQ

Q: How can I add more protein to this vegetarian snack
A: To make Jhal Moori a more filling and protein-rich vegetarian meal, add a handful of roasted peanuts, sprouted mung beans, or boiled chickpeas. These additions not only boost protein but also add a wonderful texture and crunch.

Q: Is this Jhal Moori recipe vegan
A: Yes, this Jhal Moori recipe is naturally vegan. All the core ingredients—puffed rice, vegetables, spices, and mustard oil—are plant-based. Just ensure that any store-bought Tamarind or Green Chutneys you use are also vegan, as some can occasionally contain dairy or honey.

Q: What can I substitute for mustard oil in this recipe
A: For the most authentic Bengali flavor, mustard oil is highly recommended. However, if you can’t find it or have an allergy, you can use a neutral vegetable oil. While the flavor won’t be identical, it will still be a delicious vegetarian snack.

Q: Can I prepare this vegetarian snack ahead of time
A: To ensure the best texture, Jhal Moori should be assembled right before eating. However, you can do the prep work in advance! Chop all the vegetables and mix the dry spices. Store them in separate airtight containers in the refrigerator. When you’re ready to eat, just toast the puffed rice and toss everything together.
