Ingredients

• Creamy White Bean & Sage Soup
• 1 tablespoon / 15 ml olive oil
• 1/2 cup / 75 g chopped onion, from 1 medium onion
• 2 tablespoons / 30 g minced garlic, about 12 cloves
• 3 1/2 cups / 840 ml chicken-flavor vegetable broth
• 3 15-ounce / 425 g cans Great Northern beans, rinsed and drained
• 2 tablespoons snipped fresh sage OR 2 teaspoons dried sage, crushed
• 1/4 teaspoon ground black pepper
• Fresh sage leaves for garnish, optional
• Sage French Bread Toasts
• 8 1/2-inch / 1.25 cm slices whole grain baguette-style French bread
• Olive oil nonstick cooking spray
• 1 tablespoon snipped fresh sage OR 1 teaspoon dried sage, crushed

Instructions

1. First, prepare for the toasts by preheating your oven to 425°F / 220°C.
2. In a large saucepan or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Cook and stir for about 5 minutes until the onion is soft and fragrant.
3. Pour in the vegetable broth, and add the rinsed beans, dried sage (if using), and black pepper. Stir to combine.
4. Bring the soup to a boil, then immediately reduce the heat to low. Cover the pot and let it simmer gently for 20 minutes to allow the flavors to meld together.
5. While the soup simmers, make the Sage French Bread Toasts. Lightly coat both sides of the bread slices with olive oil spray and sprinkle with your choice of fresh or dried sage.
6. Arrange the seasoned bread slices on an ungreased baking sheet. Bake for 5 to 7 minutes, turning once halfway through, until they are golden brown and perfectly crisp.
