Open-Face Veggie Burgers with Sauteed Onion

START TO FINISH: 20 minutes MAKES 4 sandwiches

2 tablespoons olive oil

1 large sweet onion (such as Vidalia or Walla Walla), halved and thinly sliced (about 2 cups)

4 refrigerated or frozen grilled vegetable meatless burger patties

2 tablespoons mayonnaise

1 teaspoon yellow mustard

4 1โ„2 -inch slices ciabatta bread, toasted

1 cup fresh baby spinach

2 tablespoons steak sauce

1 In a large skillet heat oil over medium-high heat. Add onion; cook for 8 to 10 minutes or until very tender, stirring frequently.

2 Meanwhile, heat patties in the microwave oven according to package directions.

3 In a small bowl combine mayonnaise and mustard. Spread mixture over 1 side of bread slices. Top with spinach and patties. Stir steak sauce into cooked onion; spoon onion mixture on top of patties.
