Mushroom-Vegetable Fajitas

PREP: 30 minutes GRILL: 20 minutes MAKES 4 servings

1 small avocado, halved, seeded, and peeled

1 tablespoon lime juice

1 clove garlic, minced

1⁄2 teaspoon ground cumin

1⁄2 teaspoon dried oregano, crushed

1⁄4 teaspoon salt

1⁄8 teaspoon ground black pepper

3 small fresh portobello mushrooms, stems and gills removed

2 medium red, yellow and/or green sweet peppers, halved, stemmed, and seeded

1⁄2 of a medium red onion, cut into 1⁄2 -inch-thick slices

Nonstick cooking spray

4 7- to 8-inch whole wheat flour tortillas

Lime wedges (optional)

1 In a small bowl mash avocado with a potato masher or fork until nearly smooth. Stir in lime juice and garlic. Cover the surface of the avocado mixture with plastic wrap and chill in the refrigerator until ready to serve.

2 In a small bowl combine cumin, oregano, salt, and black pepper. Coat mushrooms, sweet pepper halves, and red onion slices with cooking spray. Sprinkle cumin mixture on vegetables.

3 For a charcoal grill, grill mushrooms, sweet pepper halves, and onion slices on rack of an uncovered grill directly over medium coals until vegetables are crisp-tender, turning once halfway through grilling and removing vegetables when they are done. Allow 8 to 10 minutes for the sweet peppers, 10 to 15 minutes for the mushrooms, and 15 to 20 minutes for the onion slices. (For a gas grill, preheat grill. Reduce heat to medium. Place vegetables on grill rack directly over heat. Cover and grill as above.)

4 Place tortillas on grill rack directly over medium coals. Grill for 20 to 40 seconds or until warm and tortillas are grill marked, turning once halfway through grilling. Remove from grill and cover to keep warm. Thinly slice mushrooms and sweet peppers. Coarsely chop onion slices.

5 Spread avocado mixture on the warm tortillas. Divide vegetables among the tortillas. Fold over. If desired, serve with lime wedges.

tip

Avocados contain heart-healthy monounsaturated fat, so use them often. However, avocados are high in calories, so enjoy them in small amounts.
