Step aside, basic dips! If you’re craving that authentic, cozy pub-style appetizer, look no further. This incredibly flavorful and creamy beer cheese spread is your new go-to for any gathering. It’s a bold, tangy, and utterly addictive dip that comes together in minutes but tastes like it’s been slow-crafting for hours. The secret? Letting the flavors meld overnight. Get ready to impress everyone with a spread that’s perfect with dark pumpernickel bread, crunchy pretzels, or fresh veggies.

Ingredients

• ½ lb / 227g pot cheese or farmer’s cheese
• 3 oz / 85g full-fat cream cheese, softened
• 3 Tbs / 43g unsalted butter, softened
• 1 to 1½ tsp / 5 to 7.5ml Dijon or French mustard, to taste
• 2 Tbs / 30ml beer, preferably a lager or pilsner
• 1 Tbs / 15ml minced capers, drained
• 5 Tbs / 45g finely minced yellow onion
• 1½ tsp / 3g sweet paprika, plus more for garnish
• A pinch of cayenne pepper, to taste
• ¼ to ½ tsp / 1g ground cumin or caraway seeds, to taste
• Fresh parsley sprigs, for garnish
• Pumpernickel bread or pretzels, for serving

Instructions

1. Create the Base: In a medium bowl, press the pot cheese through a fine-mesh sieve to ensure a smooth, lump-free texture. Add the softened cream cheese and butter, and use a spatula or electric mixer to beat until the mixture is completely smooth and homogenous.
2. Combine the Flavors: Stir in the mustard, beer, minced capers, minced onion, paprika, cayenne pepper, and your choice of cumin or caraway seeds. Mix thoroughly until every ingredient is evenly distributed throughout the cheese base.
3. Let it Ripen: Transfer the cheese spread to an airtight container and refrigerate for at least 24 hours. This step is crucial as it allows the flavors to meld and deepen significantly.
4. Serve and Garnish: When ready to serve, scoop the cheese spread onto a serving plate or into a shallow bowl. Use the side of a knife or a small spatula to shape it into a smooth mound. Just before serving, sprinkle generously with a little extra paprika and garnish with fresh parsley sprigs. Serve alongside slices of pumpernickel bread or your favorite crackers.
