Easy Brown Betty

Serves 4

Per 3⁄4 cup

1 cup applesauce

2 tablespoons granulated sugar

4 tablespoons brown sugar

2 teaspoons lemon juice

1⁄3 teaspoon ground cinnamon, divided

1⁄8 teaspoon ground ginger

1⁄3 cup butter

2 cups graham cracker crumbs

Preheat oven to 350°F. Grease an 8″ × 8″ baking pan.
Combine the applesauce, granulated sugar, brown sugar, lemon juice, 1⁄8 teaspoon cinnamon, and the ground ginger. Set aside. Melt the butter. Toss the graham cracker crumbs with the melted butter. Press the graham cracker crumbs on the bottom of the prepared pan. Spread the applesauce mixture along the top. Sprinkle with the remaining cinnamon.
Cover with aluminum foil and bake for 30 minutes. Uncover and bake for another 5 minutes, to lightly brown the applesauce. Let cool on a rack. Cut into squares. Serve warm as is or topped with ice cream or whipped cream.
