1 recipe Pizza Dough

1 tablespoon olive oil

1 tablespoon snipped fresh oregano or 1 teaspoon dried oregano, crushed

2 medium roma tomatoes, thinly sliced

3⁄4 cup roasted red sweet peppers, drained and coarsely chopped

1⁄4 cup pitted kalamata olives, chopped, or sliced pitted ripe olives

1⁄4 cup crumbled reduced-fat feta cheese (1 ounce)

1⁄4 cup finely shredded Parmesan cheese (1 ounce)

Snipped fresh oregano (optional)

Cracked black pepper (optional)

1 Prepare Pizza Dough. Preheat oven to 425°F. Grease a large baking sheet; set aside. On a lightly floured surface roll dough into a 14-inch oblong shape. Transfer to the baking sheet. Prick dough all over with a fork. Bake for 8 to 10 minutes or until lightly browned.

2 Brush partially baked crust with oil and sprinkle with 1 tablespoon snipped oregano or 1 teaspoon dried oregano. Top with tomato, roasted peppers, olives, feta cheese, and Parmesan cheese. Bake for 5 to 10 minutes more or until cheeses are melted.

3 If desired, sprinkle with additional snipped oregano and black pepper.

PER SERVING: 236 cal., 8 g total fat (2 g sat. fat), 5 mg chol., 322 mg sodium, 36 g carb., 3 g fiber, 8 g protein.

Pizza Dough

1. In a small bowl combine 2⁄3 cup warm water (105°F to 115°F) and 1 package active dry yeast, stirring to dissolve yeast. Let stand for 5 minutes. Stir in 1 tablespoon honey and 1 tablespoon olive oil.

2. Meanwhile, in a medium bowl combine 3⁄4 cup white whole wheat flour, 1⁄4 cup cornmeal, and 1⁄4 teaspoon salt. Stir in yeast mixture. Stir in as much of the 3⁄4 to 1 cup all-purpose flour as you can with a wooden spoon.

3. Turn dough out onto a lightly floured surface. Knead in enough of any remaining all-purpose flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface. Cover and let rise in a warm place until nearly double in size (30 to 45 minutes). Punch dough down. Turn out onto a lightly floured surface. Cover and let rest for 10 minutes.

Substitute crumbled feta-flavor soy cheese for the feta cheese and desired soy cheese for the Parmesan cheese.
