Raspberry Vinaigrette

Yields 11⁄4 cups

1⁄4 cup balsamic vinegar

2 tablespoons lime juice

1⁄4 cup raspberry preserves

2 tablespoons Dijon mustard

1⁄2 teaspoon sugar

3⁄4 cup olive oil

Salt and pepper to taste

Process together vinegar, lime juice, raspberry preserves, mustard, and sugar in a food processor or blender until smooth.
Slowly add olive oil, just a few drops at a time, on high speed to allow oil to emulsify.
Season with salt and pepper.
