This Velvety Chickpea Soup is a testament to the power of simple ingredients. By starting with dried chickpeas, we capture every bit of their nutty flavor, using their precious cooking water—liquid gold!—to create a base that’s unbelievably rich and satisfying. A swirl of tahini and a squeeze of fresh lemon juice is all it takes to elevate this humble soup into something truly special. Get ready for your new favorite cozy meal!

Ingredients

• 2 cups / 400g dried chickpeas, washed and picked over
• 1/4 to 1/2 cup / 60-120g tahini or smooth almond, cashew, or peanut butter
• 1 tbsp / 15ml freshly squeezed lemon juice, plus more to taste
• Salt and freshly ground black pepper, to taste
• 2 tsp / 4g ground cumin or minced fresh oregano, for garnish (optional)
• 4 thin lemon slices, for garnish (optional)

Instructions

1. For a quicker cooking time, soak the chickpeas overnight. Drain and rinse them. Place the chickpeas (soaked or unsoaked) in a large pot with 2 quarts / 2 liters of water. Bring to a boil over medium-high heat, then reduce the heat to maintain a gentle simmer. Cover and cook, stirring occasionally, until the chickpeas are very tender, about 1 to 2 hours.
2. Carefully strain the chickpeas, making sure to reserve all of the precious cooking liquid in the pot. Transfer the cooked chickpeas to a food processor or high-powered blender. Add a splash of the cooking liquid and blend until completely smooth, adding more liquid as needed to get the blades moving. Pour the chickpea purée back into the pot with the remaining cooking liquid.
3. Place the pot back on the stove over medium heat. Whisk in the tahini and lemon juice until the soup is smooth and creamy. Let it simmer gently, stirring occasionally, for 3 to 5 minutes until it has thickened slightly. Season generously with salt and pepper to taste. (The soup can be made ahead, cooled, and refrigerated for up to 2 days. Reheat gently, adjusting seasoning as needed.)
4. Serve warm, garnished with a sprinkle of cumin or oregano and a thin slice of lemon, if desired.
