By using tomato juice as the base, we create a beautifully rich body and vibrant color while keeping the oil content refreshingly low. It’s tangy, herbaceous, and comes together in less than a minute. Drizzle it over crisp greens, grain bowls, or even grilled vegetables for an instant flavor boost that’s as wholesome as it is delicious.

Ingredients

• Makes 1 1/4 cups / 310 mL
• 1 cup / 250 mL tomato juice
• 2 tablespoons / 30 mL lemon juice
• 2 tablespoons / 30 mL apple cider vinegar
• 2 tablespoons / 30 mL extra-virgin olive oil
• 1 1/2 teaspoons / 7 mL chopped fresh basil
• 1 teaspoon / 5 mL Dijon mustard
• 1/2 teaspoon / 2 mL dried tarragon, crushed
• Pinch of black pepper

Instructions

1. Combine the tomato juice, lemon juice, vinegar, oil, basil, mustard, tarragon, and pepper in a jar with a tight-fitting lid.
2. Secure the lid and shake vigorously for about 30 seconds, or until all the are well combined and the dressing is slightly emulsified.
3. Use immediately or store in the refrigerator for up to 2 weeks. Be sure to shake well before each use.
