Ingredients

• (Makes 1½ cups)
• ½ pound / 227g firm or soft tofu, patted dry
• 2 tablespoons / 30 ml fresh lemon juice
• ¼ cup / 60 ml olive oil
• 2-4 tablespoons / 30-60 ml water, use less for a dip/spread
• 1 tablespoon / 15 ml tamari or soy sauce
• 2 to 3 cloves garlic, chopped

1. Combine all —tofu, lemon juice, olive oil, water, tamari, and garlic—in a high-speed blender or food processor.
2. Blend on high until the mixture is completely smooth and creamy. You may need to pause and scrape down the sides of the container a few times to ensure everything is fully incorporated.
3. Check the consistency. If making a dressing and it’s too thick, add more water, one tablespoon at a time, until it reaches your desired thinness. Taste and adjust seasoning if needed.
4. Transfer to an airtight container and store in the refrigerator for up to 4 days.
