Cranberry bread

Makes 1 loaf

• 1 cup white flour
• 1 cup whole wheat flour
• ¾ cup sugar
• 1½ tsp. baking powder
• ¾ tsp. salt
• ½ tsp. baking soda
• ¼ tsp. cinnamon
• ¼ tsp. ground cloves
• grated rind of 1 orange
• ¾ cup orange juice
• 1 large egg
• ¼ cup butter, melted
• 1 cup firm, fresh cranberries
• ½ cup chopped walnuts

1. Sift together the flours, sugar, baking powder, salt, baking soda, and spices. Lightly beat together the orange rind, orange juice, egg, and melted butter. Stir the wet ingredients into the dry ingredients.
2. Coarsely chop the cranberries and add them to the batter along with the chopped nuts. Mix everything together thoroughly and pour the batter into a buttered medium-sized loaf pan.
3. Bake the bread in a preheated 350-degree oven for 1 hour, or until a toothpick inserted near the center comes out clean and dry. Cool on a rack, and wrap tightly to store.
