The Ultimate Cowboy Cookies: A Taste of Childhood Nostalgia

Some recipes are more than just ingredients; they’re edible memories. For me, that’s my mom Rita’s famous Cowboy Cookies. I can still picture her pulling trays of these golden, buttery beauties from the oven, the whole house smelling of toasted oats and brown sugar. They’re perfectly crisp on the edges, chewy in the middle, and absolutely loaded with chocolate chips and crunchy walnuts. It was a test of willpower not to devour half the batch right then and there! To this day, they’re the treat I crave most, the ultimate comfort cookie that nothing else can top. While the origin of the ‘Cowboy’ name remains a mystery, the origin of my love for them is crystal clear: my mom’s kitchen.

Ingredients

• MAKES ABOUT 4 DOZEN COOKIES
• 1 ½ cups / 180g unbleached all-purpose flour
• ¼ teaspoon / 1g baking soda
• ½ teaspoon / 2g baking powder
• ¼ teaspoon / 1.5g salt
• 1 cup (2 sticks) / 227g butter, softened
• ¾ cup / 150g granulated sugar
• ¾ cup / 165g firmly packed light brown sugar
• 2 large eggs
• 1 teaspoon / 5ml vanilla extract
• 2 cups / 160g rolled oats (old-fashioned, not instant)
• 1 cup / 120g chopped walnuts
• 2 cups (12 ounces) / 340g semisweet chocolate chips

Instructions

1. Preheat your oven to 350°F / 175°C. Line a large baking sheet with parchment paper.2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.3. In a large bowl using a stand mixer or hand mixer, cream the softened butter with the granulated and brown sugars until light and fluffy, about 2-3 minutes.4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.5. Gradually add the dry flour mixture to the wet , mixing on low speed until just combined. Do not overmix.6. Using a wooden spoon or sturdy spatula, fold in the rolled oats, chopped walnuts, and chocolate chips. The dough will be very thick and crumbly.7. Drop rounded tablespoonfuls of dough about 2 inches apart onto the prepared baking sheet.8. Bake for 12 to 15 minutes, or until the edges are golden brown and the centers are set.9. Let the cookies cool on the baking sheet for 5 minutes before carefully transferring them to a wire rack to cool completely.
