• 1 medium cucumber
• 4 tablespoons or 60 ml chopped green chilis
• ¾ teaspoon or 4g salt, plus more to taste
• 3½ tablespoons or 52 ml fresh lemon juice
• 1 tablespoon or 15 ml red wine vinegar
• 1 tablespoon or 15 ml vegetable oil
• 1 teaspoon or 4g sugar
• ⅛ teaspoon ground cumin
• 1 cup or 240 ml plain yogurt
• ½ cup or 120 ml light cream
• 1½ cups or 360 ml vegetable broth
• For the Garnish
• Chopped green onions
• Chopped fresh cilantro (coriander leaves)
• Crispy tortilla strips, homemade or store-bought

Instructions

1. Prepare the vegetables: Halve the avocados, remove the pits, and scoop the flesh into a high-speed blender. Add the tomatoes, onion, garlic, peeled and seeded cucumber, and green chilis. Blend on high until the mixture is mostly smooth.
2. Season and smooth: Add the salt, lemon juice, red wine vinegar, vegetable oil, sugar, and ground cumin to the blender. Blend again until the mixture is completely velvety and smooth.
3. Add the creamy base: Pour the puréed vegetable mixture into a large bowl. Whisk in the plain yogurt, light cream, and vegetable broth until fully combined and silky. Taste and adjust seasoning if necessary—it might need another pinch of salt or a squeeze of lemon.
