• 2 tablespoons / 28g butter
• ¼ cup / 60ml olive oil
• 6 cloves garlic, minced
• 2 medium onions, diced
• 2 tablespoons / 30g tomato paste
• 10 cups / 2.4L Vegetable Stock
• 1 tablespoon / 15ml tamari or other soy sauce
• 1 bay leaf
• ¼ teaspoon dried oregano
• ¼ teaspoon dried basil
• ¼ teaspoon dried thyme
• 1½ teaspoons salt
• Freshly ground black pepper, to taste
• 1 medium cauliflower, about 2 lbs / 900g, cut into bite-size florets
• 1 cup / 115g macaroni
• 2 large eggs, well beaten
• ¼ cup / 15g minced fresh parsley
• Grated Parmesan cheese, for serving

Instructions

1. In a large stockpot or Dutch oven, melt the butter with the olive oil over medium heat. Add the diced onions and minced garlic, and sauté for about 10 minutes, stirring frequently, until softened and fragrant.
2. Stir in the tomato paste and cook for another minute until it darkens slightly. Pour in the vegetable stock, tamari, bay leaf, oregano, basil, thyme, salt, and a generous amount of freshly ground pepper. Bring the mixture to a rolling boil.
3. Once boiling, add the cauliflower florets and macaroni to the pot. Return to a boil, then reduce the heat to a steady simmer. Cook for 15-20 minutes, stirring occasionally to prevent sticking, until both the cauliflower and macaroni are tender but not mushy.
