Banana and coconut raita

Serves 6 to 8

• 2 Tbs. butter or Ghee
• 1 tsp. mustard seeds
• ¼ tsp. cayenne pepper
• ½ cup flaked unsweetened coconut
• 2 ripe bananas, mashed
• ½ tsp. salt
• 1 tsp. sugar
• 2 cups yogurt

1. Heat the butter or ghee in a medium-sized, heavy-bottomed saucepan and add the mustard seeds.
2. Stir the seeds over medium heat for a minute or two, then stir in the cayenne.
3. After another minute, add the coconut and bananas, remove from heat, and stir quickly.
4. Add the remaining ingredients, beat together lightly with a fork, and chill for several hours before serving.
