The Coziest Baked Apple Recipe

Ingredients

• 2 Tbsp / 30 ml coconut oil, melted
• 2 Tbsp / 30 ml pure maple syrup
• ½ cup / 120 ml whole wheat pastry flour
• ½ tsp / 2.5 ml ground cinnamon
• 1/8 tsp / 0.625 ml freshly grated nutmeg
• ¼ tsp / 1.25 ml baking soda
• Pinch sea salt
• ¾ cup / 180 ml old-fashioned rolled oats
• ¼ cup / 60 ml dried currants
• 1/3 cup / 80 ml chopped pecans
• 5 of your favorite baking apples, washed, halved and cored
• 2 cups / 480 ml unfiltered apple cider

Instructions

1. Preheat your oven to 375°F / 190°C.
2. In a medium bowl, whisk together the melted coconut oil and maple syrup.
3. In a separate bowl, combine the whole wheat pastry flour, cinnamon, nutmeg, baking soda, and salt. Add this dry mixture to the wet and mix until just combined.
4. Fold in the rolled oats, dried currants, and chopped pecans to create the streusel topping.
5. Arrange the cored apple halves, cut side up, in a single layer in a baking dish large enough to hold them comfortably.
6. Generously stuff the core cavity of each apple half with the streusel mixture. Pour the apple cider into the bottom of the dish, around the apples.
7. Cover the dish and bake for 30 minutes, basting the apples with the cider from the pan from time to time.
8. Uncover the dish and continue baking for another 15-30 minutes, basting occasionally, until the apples are tender but not mushy.
9. Serve the apples warm, drizzled with the delicious cider sauce from the pan.
