    1 teaspoon vanilla extract

    1 cup buttermilk

    1⁄4 cup vegetable oil

    11⁄2 teaspoons baking powder

    1⁄2 teaspoon baking soda

    Pinch salt

    1⁄2 cup granulated sugar

    13⁄4 cups all-purpose flour

    3⁄4 teaspoon ground cinnamon

    1⁄2 teaspoon ground nutmeg

    11⁄2 cups diced apple

    Preheat oven to 375°F. Grease a muffin pan. In a small bowl, add the egg and vanilla extract to the buttermilk and beat lightly. Add the vegetable oil and mix to combine.
    In a large bowl, combine the baking powder, baking soda, salt, sugar, and flour and stir to blend well. Stir in the cinnamon and nutmeg. Add the egg mixture to the flour mixture and stir to form a batter. Be careful not to overmix the batter; don’t worry if there are still lumps. Stir in the diced apples.
    Spoon the batter into the prepared muffin tins so that they are between 1⁄2 and 2⁄3 full. Bake for 20 minutes or until a toothpick inserted into the middle of a muffin comes out clean. Let cool for 5 minutes before serving. Store the muffins in a sealed tin.
