Speedy Mocha “Mousse” Pudding

Serves 4

Per 1⁄4 recipe

Calories: 410

Carbohydrates: 34g

Fiber: 2g

Sugar: 10g

Sodium: 270mg

2 cups heavy whipping cream

1⁄2 cup brewed instant coffee

1⁄2 cup powdered sugar

1⁄2 cup unsweetened cocoa powder

1 teaspoon vanilla extract

1 package instant vanilla pudding

1⁄2 cup (or to taste) prepared whipped cream

4 maraschino cherries

Combine the first six ingredients in a blender. Blend on low speed (prepare in two batches if necessary). Dish into parfait glasses and let sit for 5 minutes to allow the pudding to set. Just before serving, add the whipped cream and a maraschino cherry to the top of each.

Spoonful of Sugar?
Too much sugar may overwork your organs leaving you feeling tired and hungry, so make sure to only incorporate it into your balanced diet in small amounts. The American Heart Association recommends 9 teaspoons, or 32 grams, of sugar each day.
