    Roasted Cashew and Spicy Basil Pesto

    4 cloves garlic

    1 cup Thai basil, packed

    2⁄3 cup roasted cashews

    1⁄2 cup nutritional yeast

    1⁄4 teaspoon salt

    1⁄2 teaspoon black pepper

    1⁄3 cup olive oil

    Place all ingredients except the olive oil in blender or food processor and blend until smooth. Slowly incorporate olive oil until desired consistency is reached.

    Traditional Pesto
    For a more traditional Italian pesto, you can, of course, use regular Italian basil. In this case, cut back on the garlic a bit, and use pine nuts or walnuts instead of roasted cashews.
