Black Bean and Mango Wraps

PREP: 20 minutes GRILL: 5 minutes MAKES 6 servings

1 20-ounce jar refrigerated mango slices, drained

11⁄2 teaspoons Jamaican jerk seasoning

6 7- to 8-inch whole grain flour tortillas

1 15-ounce can black beans, rinsed and drained

1 11-ounce can whole kernel corn with sweet peppers, drained

3⁄4 cup chopped, seeded tomato (1 large)

2 tablespoons snipped fresh cilantro

1 tablespoon lime juice

2 teaspoons finely chopped canned chipotle peppers in adobo sauce*

1 medium avocado, halved, seeded, peeled, and sliced

3⁄4 cup shredded Monterey Jack cheese

1 Pat mango slices dry with paper towels. Sprinkle Jamaican jerk seasoning over both sides of mango slices; gently rub in with your fingers.

2 For a charcoal grill, grill tortillas on the greased rack of an uncovered grill directly over medium coals about 1 minute or until bottoms of tortillas have grill marks. Remove from grill and set aside.

3 Grill mango slices on the rack directly over the coals about 4 minutes or until heated through and grill-marked, turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place tortillas on greased grill rack over heat. Cover; grill as above. Remove tortillas from the grill and add mango; cover and grill as above.)

4 Meanwhile, in a medium bowl combine drained black beans, corn, tomato, cilantro, lime juice, and chipotle chile peppers.

5 To assemble, place tortillas, grill-mark sides down, on a flat work surface. Top each tortilla with some of the mango slices and avocado slices. Top with black bean mixture and shredded cheese. Roll up tortillas to enclose filling. Cut each in half to serve.

PER SERVING: 346 cal., 12 g total fat (4 g sat. fat), 13 mg chol., 839 mg sodium, 47 g carb., 18 g fiber, 18 g pro.

*tip

Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
