• 4 ounces / 115 g soft goat cheese (chèvre)

Instructions
1. Preheat your broiler. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the mushrooms, carrots, red onion, and garlic, cooking for 2 to 3 minutes until the vegetables just start to brown.
2. Add the water to the skillet. Cover, reduce the heat to medium, and cook for about 5 minutes, stirring once, until the vegetables are crisp-tender. Season to taste with salt and pepper.
