Mediterranean Pepper and Artichoke Pizza

PREP: 20 minutes BAKE: 20 minutes OVEN: 425°F MAKES 8 servings

1 6- to 6.5-ounce package pizza crust mix

1 teaspoon dried oregano or basil, crushed

1⁄2 cup pizza sauce

1 cup roasted red and/or yellow sweet peppers, cut into strips

1 6-ounce jar marinated artichoke hearts, drained and coarsely chopped

1⁄4 cup sliced green onions (2) and/or chopped red onion

1 cup crumbled semisoft goat cheese (chèvre) (4 ounces)

1⁄2 cup shredded mozzarella cheese (2 ounces)

Freshly ground black pepper (optional)

1 Preheat oven to 425°F. Grease a large baking sheet; set aside. Prepare pizza crust according to package directions, stirring oregano into dry mixture. Transfer dough to the prepared baking sheet. Using floured hands, press dough evenly into a 15×10-inch rectangle, building up edges slightly (crust will be thin). Bake for 7 minutes.

2 Spread pizza sauce evenly over crust. Top with roasted peppers, artichokes, and green and/or red onions. Sprinkle with goat cheese and mozzarella cheese.

3 Bake for 13 to 15 minutes or until crust is golden brown and cheeses are melted. If desired, sprinkle with black pepper.

PER SERVING: 170 cal., 7 g total fat (4 g sat. fat), 15 mg chol., 419 mg sodium, 19 g carb., 2 g fiber, 7 g pro.
