    1 egg, separated

    1⁄4 cup melted butter

    3⁄4 cup plus 2 tablespoons buttermilk

    11⁄2 teaspoons baking powder

    1⁄8 teaspoon salt

    21⁄2 tablespoons brown sugar

    1 cup all-purpose flour

    1⁄4 cup chopped macadamia nuts

    1⁄2 cup pineapple chunks, canned

    Preheat waffle iron.
    In a small bowl, use an electric mixer to beat the egg white until it is stiff. In a separate bowl, beat the egg yolk well and mix in the melted butter and buttermilk.
    In a medium-sized bowl, stir the baking powder, salt, and brown sugar into the flour, blending thoroughly.
    Make a well in the middle of the flour mixture. Pour the beaten egg mixture into the well and stir into the dry ingredients. The batter should resemble a muffin batter.
    Gently fold in the egg white. Gently stir in the macadamia nuts and pineapple.
    Cook the waffles according to the instructions on the waffle iron.
