2 8-inch multigrain, whole wheat, or plain flour tortillas
3⁄4 cup shredded romaine lettuce and/or fresh spinach leaves
1⁄2 of an avocado, seeded, peeled, and sliced
1⁄4 of a cucumber, halved lengthwise, seeded, and thinly sliced
1⁄4 cup shredded Monterey Jack cheese with jalapeño peppers (1 ounce)
Salsa (optional)
1 On each tortilla, layer lettuce and/or spinach, avocado, cucumber, and cheese. Roll up tightly. If desired, wrap each tortilla roll in plastic wrap and chill for up to 6 hours. If desired, serve with salsa.
