4 English muffins
4 poached eggs (see Basic Poached Egg earlier in this chapter)
11⁄2 tablespoons butter
11⁄2 tablespoons all-purpose flour
3⁄4 cup milk
1⁄4 cup shredded Parmesan cheese
1 teaspoon prepared mustard
1⁄4 teaspoon ground nutmeg
Salt and pepper, to taste
Split the English muffins in half and toast.
Melt the butter in a small saucepan over low heat. Stir in the flour. Cook on low heat for 3 minutes, stirring continually. Gradually whisk in the milk. Whisk in the cheese. Stir in the prepared mustard, nutmeg, and salt and pepper.
Place 1 cooked egg on one half of an English muffin. Spoon 1⁄4 of the sauce on the other half and close up the muffin. Repeat with the remaining muffins.
