Lemon Basil Tofu

Serves 6

Per 3 slices or 4 oz. of tofu

3 tablespoons lemon juice

1 tablespoon soy sauce

2 teaspoons apple cider vinegar

1 tablespoon Dijon mustard

3⁄4 teaspoon sugar

3 tablespoons olive oil

2 tablespoons chopped basil, plus extra for garnish

2 blocks extra-firm tofu, well pressed

Whisk together all ingredients, except tofu, and transfer to a baking dish or casserole pan.
Slice the tofu into 1⁄2-inch-thick strips or triangles. Place the tofu in the marinade and coat well. Allow to marinate for at least 1 hour or overnight, being sure tofu is well coated in marinade.
Preheat oven to 350°F. Bake for 15 minutes, turn over, then bake for another 10–12 minutes or until done. Garnish with a few extra bits of chopped fresh basil.
