Lemon Mint New Potatoes

Serves 6

10 small new potatoes, chopped

4 cloves garlic, minced

1 tablespoon olive oil

1⁄4 cup chopped mint

Salt and pepper to taste

2 teaspoons lemon juice

Preheat oven to 350°F. Line or lightly grease a baking sheet.
In a large bowl, toss together the potatoes with the garlic, olive oil, and mint, coating potatoes well.
Arrange potatoes in a single layer on a baking sheet. Roast for 45 minutes. Season with salt and pepper and drizzle with lemon juice just before serving.
