    Creamy Tofu Shake

    101⁄2 ounces soft, silken tofu

    1 cup frozen, unsweetened blueberries

    1 cup canned crushed pineapple, with juice

    2 tablespoons liquid honey

    1⁄2 teaspoon vanilla extract

    1⁄3 cup soy milk

    Drain any excess water from the tofu and cut into chunks. If using home-frozen blueberries instead of commercially bought frozen berries, wash before using. Process the tofu and crushed pineapple along with the pineapple juice from the can until smooth. Add the blueberries and process until smooth. Add the honey, vanilla extract, and soy milk, and process again. Chill the shake in the refrigerator until ready to serve.
