    Coconut Rice Pudding

    11⁄2 cups cooked white rice

    11⁄2 cups vanilla soy milk

    11⁄2 cups coconut milk

    3 tablespoons maple syrup

    2 tablespoons agave nectar

    4 or 5 dates, chopped

    Dash cinnamon

    2 mangos, chopped

    Combine rice, soy milk, and coconut milk over low heat. Bring to a very low simmer for 10 minutes, or until mixture starts to thicken.
    Stir in maple syrup, agave nectar, and dates, and heat for another 2–3 minutes.
    Allow to cool slightly before serving, to allow pudding to thicken slightly. Garnish with a dash of cinnamon fresh fruit just before serving.
