Frozen puff pastry is the secret behind these opulent treats. Plan ahead when using puff pastry because it takes 30 minutes to thaw. Although tapenade is evocative of olives, the name references the capers that are also present.
1 sheet frozen puff pastry, thawed
1 cup black olive tapenade (page 18)
Preheat the oven to 400°F. Unfold the thawed pastry onto a lightly floured surface. Use a rolling pin to roll out the pastry into a thin rectangle. Cut in half lengthwise. Spread the tapenade on one of the pastry halves. Place the remaining pastry half over the one with the tapenade. Roll gently with the rolling pin to seal. Use a sharp knife or a pizza wheel to cut crosswise into ½-inch strips. Twist the strips and place on a greased baking sheet, about 2 inches apart. Press down the ends of each pastry twist so it remains twisted.
Bake until golden brown, about 10 minutes. Serve warm or at room temperature.
