1⁄2 recipe Marinated Artichoke Hearts (see recipe in this chapter)
1⁄4 cup plain cream cheese
1 tablespoon chopped red onion
1⁄4 teaspoon red pepper flakes
4 slices crusty rye bread
Chop the artichoke hearts and the tomato slices prepared from the Marinated Artichoke Hearts recipe. Stir in the cream cheese, chopped red onion, and red pepper flakes. Process in a food processor or blender until the mixture is smooth but still a bit chunky.
Spread approximately 2 heaping tablespoons of the cream cheese and artichoke mixture on each slice of bread. Broil for 3–5 minutes, until the spread is heated through. Store any leftover spread in a sealed container in the refrigerator.
